Mini Apple Rose Pie v2
Made this again but with different pie crust. I was browsing around for recipes that use almond meal and came across Elana Pantry that has a simple paleo recipe for pie crust. And it is a keeper indeed! I really like the crunch of the crust with the baked apple slices that formed the rose. If you like nutty flavor, this crust recipe is for you 😉

1 cup almond meal
1/8 tsp salt
1/2 egg
1 tbsp coconut oil

1/4 cup brown sugar
1 tbsp melted unsalted butter
lime/lemon juice

Rose preparation: Cut the apple based on the image on the left. Then slice the apple cuts as shown in the picture above. I used a mandolin to slice it or you can use a sharp knife to do it too 😉 Melt the 1tbsp butter in microwave for about 50 secs and then mix in 1/4 cup of brown sugar. Squeeze lime/lemon juice (a bout half of a lime/lemon) onto the apple slices and mix in the butter+brown sugar. Toss to combine. Put in microwave for about 1-1.5 mins till the apple slices are flexible enough to be rolled.

Pie crust preparation: Put 1 cup of almond meal + 1/4 tsp salt in a food processor. Pulse. Add in 1tbsp of coconut oil and 1/2 of whisked egg to the food processor. Pulse till a ball is formed. It’s my first time using coconut oil and almond meal to make a crust. I think the 1tbsp of coconut oil may be a little too much and I’ll try to reduce it the next time. Wrap the dough in a ball shape with cling wrap and put in the fridge for about 15 mins or more. Roll the dough in between after putting a layer of cling wrap on the pie dough to your desired thickness (I would suggest 0.5cm). You will want to do this to protect your rolling pin else it may absorb the coconut oil. Surprisingly, the pie crust is easy to be formed and rolled. Use a cup to cut the dough into round shape and place it into muffin tin.

Making roses: Arrange the apple slices overlapping each other vertically, about 10 slices per pie. Roll front one end (from south to north) to the other end slowly with both hands. Don’t worry if it doesn’t look like a perfect roll, you will be able to correct it later. Once you roll up the apple slices, place them onto the pie crust. You can add one or more slices if you prefer a bigger rose on the pie, it’s all up to your creativity!

Baking the pie: Bake for about 11 minutes at 350F. Brush some strawberry jam (or any other berry jam) on the roses for additional flavor and color. Best eaten fresh!
